Gluten-Free, Dairy-Free Pumpkin Chocolate Chip Cookies

In the world of desserts, I still have not found anything to match the satisfaction and fulfillment of a freshly baked cookie.  Yes, the cookie that has just been removed from the steaming oven and placed on a cooling rack.  Forget about waiting for them to cool!  It is a lot more pleasing to quickly scoop the hot cookie from the pan and toss it between the left and right hand while it cools.  Then, before too long, I love to bite down on the cookie and catch the melted chocolate chips between my teeth.  Oh, doesn’t that sound mouth-watering? How to Store Garden Onions

There is something enthralling about toiling in the dirt with my hands as I plant seeds in my garden.  Over the next couple months, as I water, weed, and nurture the plants I find great satisfaction in seeing the fruits of my labor.  It is so exciting to pull off the ears of corn, dig the red potatoes, box up the tomatoes, and cut the heads of broccoli (along with the harvest of other plants).  As summer comes to a close and I began to clean out the garden, I feel a sense of pride that I cannot receive anywhere else.  There is something special about being in perfect harmony with nature and I feel blessed that the earth has brought forth such a great yield. Hawaiian Haystacks

This weekend we had an important family event.  It brought us all together and united us once more.  We laughed and we played and forgot our cares.  It was joyous to watch the kids as they played games with their Uncle, who is extremely exuberant.  He wrestles with all of them and comes up with exciting games to engage their interest and to entertain.  In fact, he is so popular that the nieces and nephews fight over him (I don’t blame them. He is a lot of fun). Gluten-Free, Dairy-Free, Banana Pancakes

I have always loved pancakes.  In the past, after I entered a restaurant that served breakfast all day, I would order a heaping stack of pancakes and then stuff myself.  That was then and this is now.  As of today, I could not eat a pancake in a restaurant due to its gluten and dairy content.  Also, I cannot handle the sugar laden syrups that induce an immediate headache.  All of these common side effects that I experience by eating the typical types of pancakes are actually a blessing in disguise. BBQ Meatballs

In order to make improvements with Natural Cooking Recipes, I encouraged myself to finally upgrade to a higher quality camera.  The purpose for this upgrade was to get professional quality pictures.  I did not realize at the time that I should have taken a photography class along with my purchase.  The class would ensure that I actually knew and understood all of the functions on the camera.  So, after a day of internet research and playing with lighting, I finally was able to produce superior pictures (well superior for my experience).  Read more »

Baked BBQ Chicken

The Key to Health: Part 3

While eating all natural whole foods and seeking alternative therapies are absolutely necessary, they are not enough for complete health.  There is also an aspect of the body that must be nurtured and not neglected.  That is the emotional and spiritual side.  Let me expound on that.  How heavy are negative thoughts?  How light are angry and envy?  The last time that I experienced these emotions I was weighed down with a heaviness that does not exist when I am positive and happy.  That weight causes an extreme amount of stress on my body and I believe that it occurs even on a cellular level.  Read more »

Gluten-Free Chicken Noodle Soup

Spring is definitely in full swing.  Lately, we have had unusually warm weather reminding me that summer is approaching.  I love summer and feel a longing for it to continue once fall looms at the doorstep.  There is nothing more refreshing than a breathtaking sunrise or sunset, especially over the mountains.  These are the spectacular views that I have the privilege of experiencing out in the wide open country.  When summer arrives, the barbeques are in full swing and quick meals are preferred.  That is not the case in our household.  No matter the temperature outside, I still cannot pass up a nice warm bowl of homemade soup. Mild Blackened Chicken

It is amazing how many combinations can be created with whole food ingredients, such as chicken.  Sadly enough, many recipes attempt to flavor enhance  chicken, turning it into a preservative nightmare.  Some of the most common flavor enhancers are cream of soups.  I usually refer to them as the “cream of whatever”.  Since when did food need to have so much garbage (and yes, that includes the cream of soups) added to it to make it taste worthy?  Going back to the basics is the only way to go.
